The other day, when I asked my three-year-old what he wanted for breakfast, he replied, “Pizza.” Now, I’ve been a fan of cold leftover morning ‘za since my college days, but not having any in the house, and wanting to instill good breakfast habits in the next generation, I came up with this quick, healthier adaptation. It got the pre-schooler stamp of approval.
- Take a plain, whole-wheat, or muti-grain tortilla, depending on how crunchy you want to be. The smaller taco size works best—the big burrito ones tend to flop too much.
- Spread with cream cheese, peanut butter, or soy butter.
- Sprinkle with a combination of breakfast cereal, chopped fresh or dried fruit, nuts, and about 1/4 tsp cinnamon. Use whatever you have in the house. Make sure to chop the items appropriately for your child’s age, so they don’t present choking hazards.
- Press items gently onto surface with a spatula or the back of a spoon.
- Cut into wedges. (Some kids may prefer a non-pizza-like rollup instead.)
This also works as a good snack. Best of all, it’s a great recipe for kids to help make. (Discourage them from covering the tortilla with jam and dotting with Fruit Loops.)
I’ve also thought about doing an all-out weekend version involving brioche dough and an artful arrangement of sliced apples drizzled with honey. Stay tuned.
